It is said that the best places are hidden or at least away from the hustle and bustle that surrounds the majority of places.
Nothing more true.
Pasta e Vino is probably the most beautiful and elegant place in Palau.
The furnishings are sober and classy, without excess, delicate, with soft pastel colours.
The external dehor is really nice but it is the inside that reveals the style of the place to the eye.
A large wall filled with special bottles of wine, carefully selected, welcomes those who enter.
All this suggests an elegant but essential type of cuisine aimed entirely at taste and ingredients, and this is exactly what my wife and I were able to see this evening.
A boy and a lady make up the dining room team.
Synchronism, perfection, elegance, style, extreme education and class, shine through without any hesitation in their table service.
The dishes we chose were the following:
A spaghetti with clams and bottarga and a fregola with seafood.
Both sensational.
When bitten into, both the spaghetti and the fregola were literally perfect.
Exemplary cooking.
Amazing creaming and risotto.
A more than perfect amalgam made every bite an exceptional delicacy.
On the palate and in the mouth, the hints of the sea left, with every bite, a wonderful sensation of freshness which hinted at the very high quality of the raw materials.
A balance of flavours, a balance that only those who know what cooking means can create.
The depth of the aromas is perfectly accompanied by the delicacy of the flavors.
What can I say: Chapeau, Chef!
The wine served was a white with an excellent bouquet.
In the mouth it left hints of peach, cherry wood but also a fresh and persistent tannin.
Uniform and deep on the palate, it went perfectly with both courses.
To conclude the dinner, an excellent lemon sorbet and a delicious hazelnut semifreddo.
To conclude this discussion, I would say just three words:
FOOD AND WINE EXCELLENCE.
