After hearing a lot about it from enthusiasts from around the world and from Japanese cuisine, I booked and went with friends for the Ramen evening.
Appetizer with vegetables (the mountain herbs surprised us a lot) and a delicious meatball.
Then the 4 best Gyoza of life.
Thin dough, tasty and tasty filling, good soy sauce, not the usual one in the bottle that we all know.
The main dish: Ramen cooked for 72 hours.
I would have drunk the broth by the liter, homemade pasta, meat that tasted like butter.
All seasoned with Yamato beer made in Italy with Japanese hops and an excellent toasted green tea prepared by Hasmimoto, a crazy character who passionately and sympathetically talks about everything (and more) that he brings to the table.
In addition to having eaten well and enjoyed it thoroughly, we had a real experience, truly far from other types of similar places, Hashimoto is in a Galaxy of its own.
Finally the dessert, matcha panna cotta with red bean jam.
And that was good too!
In the end it will be tough for everyone, Hashimoto himself will explain to you what it is.
I can't wait to go back.

At the Gyoza there is only the photo of the empty plate because, although we had ordered an encore, none of us ever remembered to take a photo before pulverizing them.

alla ricerca spasmodica di sapori che non siano sempre uguali ci siamo imbattuti per caso in questo giapponese, dove in bella vista è chiaro che non è un all you can eat e che le pietanze sono fatte, veramente (a dir del proprietario), secondo il gusto del Sol Levante.
Beh, assolutamente vero! la serata "sushi non per tutti" è stata fantastica, sia come atmosfera che, soprattutto, come gusto. Ok che non si può scegliere ma non ricordo onestamente qualcosa che sia risultata sottotono.
Qualità prezzo, tra le altre, non troppo più alta di un qualsiasi ayce di medio/alto livello.
Consigliato senza remora alcuna.

Wonderful flavor experience.
The chef prepares every single dish with precision and heart. Everything delicious from the appetizer to the final sweet surprise.

I've been to Japan twice and I didn't think I'd be able to savor the delicacies I tasted during my travels just a stone's throw from home.
The Japanese chef is friendly and very nice. I will definitely be back as soon as possible.

This restaurant and the owner are always a guarantee. It should be taken like a medicine: you have to go back every 6/8 months!
The care taken over the dishes, all of the highest quality and really well structured, each dish is a discovery.
The owner is very friendly and also available for explanations of the various preparations, you can feel all his passion for cooking.
We can't wait to return 😁

Esperienza unica, mai mangiato un sushi così buono! Il sashimi si scioglie in bocca e i sapori sono assolutamente eccezionali! Il servizio è veloce, lo chef è molto disponibile e simpatico anche nella spiegazione delle varie portate. Ci sono tornato anche per il menù ramen ed è fenomenale! Ramen con brodo a lunga (lunghissima!) cottura, con manzo pollo e pesce. Noodles fatti a mano, senza uovo, con 5 farine. Unico nel suo genere, molto saporito e per nulla pesante. Con la salsa piccante suggerita dallo chef il tutto acquisisce una marcia in più!
