Sublime experience, the best to date…
Upon arrival you park in an internal area in front of the farmhouse which immediately denotes the care and welcome
Upon entering I immediately felt at ease and had a pleasant feeling of carefreeness.
We preferred not to follow a 4/7 course route but to decide on a few dishes that were pleasant to the palate.. all strictly as I requested without butter..
Everything wonderful and perfect; satisfied to the eye and the palate combined with Soente Cotarella

Excellent food, as you can expect in a starred restaurant.
But there was one thing I didn't like: there were 4 of us who went and we wanted to try the tasting menu. 3 wanted the meat menu and I had asked, just for me, for a variation because I don't eat meat. They told me it couldn't be done and that all four of us would have to have the same menu. The friends very kindly agreed to take my menu and so we did. Now, if I can accept such a request in any restaurant, I find it unacceptable that this happens in a restaurant where you don't pay less than 120 euros per person. For that amount, I expect a very different availability than that shown.

Incredible cuisine, dishes never tried. From the welcome entrees to the small pastries before the coffee, the service is also excellent. Appropriate price for the quality. Definitely the best quality restaurant in the area.

Eccellente, senza mezzi termini. Ho avuto il piacere di degustare una cena di coppia da 7 portate presso la Coldana la scorsa settimana e l'unico dispiacere è non esserci andata prima.
La location è intima e accogliente, le portate una meglio dell'altra ed il servizio, a mio modo di vedere, è il punto forte. Formale quanto basta ma non ingessato, tutti i camerieri sono disponibilissimi e preparati, davvero impeccabili. Anche lo chef Proietti Refrigeri molto gentile, si è presentato ai tavoli per scambiare due parole.
I piatti sono ricercati, presentati in maniera accattivante, i sapori sorprendenti e persistenti al palato. Costo assolutamente misurato all'esperienza fatta, è valsa ogni singolo centesimo. Ci tornerò sicuramente.

Alessandro Proietti Refrigeri ha le idee chiare e il progetto del cascinale settecentesco sembra funzionare. La location, gli arredi non violenti e le giuste luci: tutto è apparecchiato. Si percepiscono le contaminazioni delle numerose esperienze dello Chef, nonostante la riservatezza che ostenta al tavolo. I colori, i memorabilia e qualche piatto iconico aggiungono un carattere ancora da formare. La sensazione dell’arrivo c’è, così come la strada (ancora) da percorrere. C’è tempo, e c’è spazio di manovra.
