A trattoria dedicated to innovation. A source of pride for these young people who successfully face and challenge a culinary culture that is difficult to improve, but here they know how to do it. I recommend it without hesitation.

Nowadays the concept of Trattoria has become increasingly closer to that of a restaurant and is now used as a strategic term to give an idea of ​​greater informality. However, the cuisine of trattorias is often no longer mere tradition but can be refined and become gourmet. This is certainly the case of Trattoria alla torre, which offers local cuisine with an eye for tradition but at the same time fresh, young and refined. One dish in particular literally stole my heart: guinea fowl terrine with sweet and sour red onions, cashew ginger mayonnaise and - listen to me - fried guinea fowl skin! This last element made me reflect on how sometimes simple and recoverable things are a thousand times more effective than spherification as an end in itself or a foam with the Pacojet. A high-level dish that made me enthusiastic much more than several dishes eaten in award-winning restaurants. Open stage applause for the chef, who also delighted us with an exceptional fresh pasta with duck ragù and chocolate (!) and a splendid roast rabbit (another great passion) with leeks and shallots served with its stock. The dessert is also spectacular: a kind of homemade camilla on coconut cream. Everything is the result of research and nothing left to chance. The wine list, from which we selected Josef Guadalupe's Rubino, the bitters, the coffee and also impeccable service. All this at a really low price compared to what we are used to in the city

We ate very well, carefully prepared and refined dishes, you can feel that the ingredients are of high quality, we really appreciated the starters and main courses. The staff were prepared and very kind. We will definitely be back.
