Family-run place for generations, very attentive to customers, excellent service.
Platter with local products, cured meats and cheeses, truly excellent as were the first courses and desserts (we didn't take the second course). A round of applause to the ninety-year-old grandmother and her presence in the kitchen.

High-end trattoria with delicious first courses and homemade pasta. Special and refined environment, friendly staff and fast service. Prices slightly above average but we are talking about a historic place reported in the Michelin guides. Not to be missed!

The restaurant is truly fascinating and evocative in its furnishings and choice of colors. Excellent food, from the starter to the pici alla matriciana. And compliments to the professionalism of the service, truly welcoming and attentive. A place that certainly deserves a special mention in the case of a visit to this splendid land

A lunch to remember, in a historic venue recently renovated with great taste and elegance. Superlative Amatriciana, as is the cellar, managed with great knowledge of the subject by Samuele Calistri (an exquisite person, as are all the staff). Correct bill, decidedly favorable quality/price ratio

I absolutely recommend having dinner at Trattoria del Cimino after a visit to Palazzo Farnese, a great jewel of our country's history and architecture.
The cuisine of this restaurant will satisfy every palate: these are typical and very tasty dishes, typical of Tuscia cuisine. We tried the recommended tasting menu - among the dishes we tried I recommend the pappardelle with white wild boar ragù and the rabbit with vegetable giardiniera, both excellent!
The dining room staff is very attentive and will also be able to advise on the most congenial wine pairings.
The trattoria is also part of the network of historic trattorias in Italy and is listed in the Micheline guide - all the more reason to stop!

Magnificent location, renovated but without losing its identity. Try the carbonara and pappardelle with hare ragù, excellent selection of cured meats and also wines by the glass. Service a little slow, dessert a little lower than the other dishes. Overall a great lunch

Une excellente découverte en revenant de la visite du Palazzo Farnese. Le mieux serait de venir le soir et se laisser tenter pour un menu dégustation/découverte. Il s’agit d’une institution dans la région. Le pain a même été fait juste pour nous. Une vraie pépite.

Ottimo pranzo in questo ristorante di Caprarola. Portate di qualita’ (Pappardelle alla lepre, Controfiletto di manzetta maremmana e Semifreddo alla nocciola) e buon assortimento di vini. Servizio cordiale e prezzi corretti.
