We visit many stars aspiring restaurants and we decided to give a try to Marcelin. We ought to think the staff has changed with respect to previous reviews. The location is very nice and well placed for hosting a high level restaurant. They have a choice of menus, one from the “territorio”, one dedicated to white truffle and one from which you can choose the dishes. We decided to chose the dishes as part of a three courses menu with wine pairings. Without giving out too much, the restaurant has very high potential but the dishes sometimes fell on some basic aspects. A couple of dishes had way too much bitterness and were not balanced (we didn’t have truffle; we recognize it might have helped) Some sauces/reductions were not enough/good enough to provide balance to the dishes main protagonist (e.g Lamb). Wine pairing is ok for the price you pay (20€ more) but if I were the sommelier I would go for some more “advanced” choices and maybe have the host pay a little bit more. We liked the risotto with mushrooms and Anguilla (eel). Levitated products are very good (bread, grissini and focaccia) We would suggest to simplify and focus more on the flavors and less on “complexity”. A word of merit on the final vermouth from “Elena spirits”: incredibly good. Service can be improved but the restaurant needs more staff. 2 people are not enough to provide a high level experience and these people can get easily stressed. Put some small patisserie at the end of the dining experience; it will soften up things and make people leave with a sweet note. More than happy to reconsider our review! Improvements are really easy to implement here!
