05/04/2024: We had a wonderful evening at Quintessenza during our visit to Puglia. The tasting menu was delicious, varied and really showcased the local produce. The service was absolutely fantastic, we felt so welcomed and at home. Thank you!

01/04/2024: If before it was excellent, now it is simply something exceptional, every time they manage to improve which makes each visit even more pleasant. Every single dish is an explosion of flavors and a pleasure to travel half of Italy just to come here. A place absolutely not to be missed for any reason in the world, much better than some more famous restaurants with 2/3 Michelin stars. Apollo forever. ❤️

01/04/2024: Restaurant just outside the centre. Various appetizers, the mixed fried food is decent. The first courses, ciceri e tria and the orecchiette with meatballs are very good. The burrata with alice is decent. Service a little slow.

14/03/2024: Dinner with friends, nothing short of perfect. I'm sorry to read negative reviews. My experience was positive both for the fast, attentive and friendly service and for the quality of the food. The doses are adequate, the preparations are careful and harmonious.

24/03/2024: Five stars are few to describe this truly exceptional family-run restaurant, the food is uniquely good, one of the owners, who is also the restaurant manager, is very nice without his stopping for a joke at the tables compromising the service which is very fast and precise. Despite being a family restaurant, the decor is modern and minimalist. The place is very clean (including the bathroom). An honorable mention must be made for the home-made Padre Peppe served at the table in watering cans. If you want to have a taste of Murgia cuisine, hospitality and warmth, this place must be on your road map.

03/10/2023: In assoluto una delle migliori cene del mio soggiorno salentino, tanto da ritornarci subito la sera successiva, tanto eravamo rimasti soddisfatti. Siamo stati consigliati dalla nostra titolare del b&b di Morciano di Leuca di provare questo locale, se eravamo in cerca della vera cucina del posto, ed aveva assolutamente ragione. Nelle due serate in cui siamo andati, abbiamo provato piatti diversi (una menzione particolare al "Carosello", un insieme di antipasti uno più buono dell'altro, dalle polpette, ai fiori di zucca e ricotta col miele, alla bufala con marmellata di pere....la mia bocca ha ancora l'acquolina), e non siamo mai stati delusi. Il menù non è troppo ampio, e lo ritengo un punto di merito, soprattutto quando la qualità è così alta. Anche i primi sono di tutto rispetto, per non parlare delle bombette prese come secondo. Sapori che ancora ci sogniamo, peccato che la terza sera fosse quella della partenza, altrimenti avremmo fatto il tris. Una menzione poi per il titolare Antonio e tutta la sua squadra: sempre cpn il sorriso, pronti a spiegare il piatto e consigliare, oltre ad avere una gentilezza che ormai non è scontata. Il prezzo è più alto di quello di altre trattorie, ma assolutamente in linea, se non addirittura basso, se rapportato al menù ed alla assoluta qualità del cibo. Se capitate da quelle parti, fidatevi, e andate da Antonio!

29/09/2023: Went there on our last night in Salve and got somewhat disappointed. The food was average and the interior of the place also nothing special. It's decent food, i just weren't impressed by the atmosphere. The staff and service was good!

04/04/2024: I hadn't been there for a few years and I returned for Easter Monday with a fixed menu. The place remains a guarantee. You book, eat, pay and leave. Everything of good quality and friendly and helpful staff.

15/03/2024: Honestly I only evaluate the position and the location, as it is a very remote place surrounded by country lanes and if you don't take the GPS you will get lost in the bush that is there. Being a structure surrounded by a farm, there is a bad smell of manure. Presentable pok structure.

10/03/2024: This restaurant is really recommendable. Refined in its simplicity. The dishes cooked with seasonal country vegetables, the coffee served in the moka. Uncommon and delicious dishes. Friendly and attentive service. Bright environment, with large windows and details that make it welcoming. Prices absolutely adequate for the menu. A real gem.

02/04/2024: Easter Monday…10 tables to be served by 3 waitresses An hour of waiting and having only eaten the first course of the appetizer. Food…nothing good! Service... ask for bread or water, it will arrive after an hour. Not to go back again, but never really again. Disaster I state paid but without a receipt
